In the middle of the 19th Century, the Cuellar family founded the winery to meet the demand for wine from Madrid. In 1953, it passed into the hands of the Peral family, who innovated by introducing cultivation and production techniques, such as “sobremadre”, an ancient tradition of fermenting the wine with a part of the skins. Jesús Peral, current winemaker and owner continues the tradition today. The winery, as is typical in the area, has an interesting cave carved out of the rock, which is open to visits and in which various stages of the winemaking process continue to be carried out.
